Waterproofing membrane goes over the pan and up the walls before tile, niches get framed and sealed rather than cut in as an afterthought, and every job gets a written fixed price so a surprise behind the wall does not become a surprise on your invoice.

Yes, every time. Membrane over the pan and up the walls, corners and the niche sealed, then tile. It is the step that decides whether a shower lasts, and it is the first thing to get skipped by someone racing to a low bid.
Yes. Tub-to-shower conversions are one of the most common jobs we do, and we can build in a bench, a niche and a frameless glass surround while we are in there.
